Wash, peel and grate the sweet potatoes. Mix in a bowl with the egg, flour, nutmeg, salt and pepper. Use a little more or less flour as needed. Place small piles of the mixture in a hot pan with 1-2 tablespoons of oil. Press flat and fry on each side for 4-5 minutes until golden and crispy.
Bake all rösti in portions in this way. Drain on kitchen paper and e.g. Serve with a yoghurt dip.
