Ingredients for the royal pie:
- 220g yogurt
- 270g sugar
- 120g sunflower oil
- 2 vanilla
- 2 eggs
- 330g flour that puffs only half a kg of mastic beaten in a mortar zest of half an orange
- 1 pinch of salt
Ingredients for the icing:
30g Preheat the oven to 180. Put the eggs, sugar, vanilla and whipped mastic in a deep bowl. Add the salt, the orange zest and the sunflower oil. Stir vigorously for 2 ‘with an egg beater. Add the flour to the mixture, passing it through a sieve so that it does not make “knots”. Stir again.
Add the yogurt and mix well with the egg beater, again. Lubricate a round mold with a diameter of about 24 cm. Pour the mixture, making sure it spreads well over the entire surface. Bake in your preheated oven, on the heating elements, for 40′- 50 ‘, at 180. Watch out! Let your king pie cool completely before proceeding to decoration and composition. Execution for the icing: Melt the white couverture in a baking pan and then put it in a bowl and pour in the sunflower oil, stirring with a fork. Pour the icing over the king pie.
You decorate as you like. I usually write the number of the year with pomegranate seeds, which make a perfect color contrast with the white of the icing. If you want it more gourmet, you can put blueberries or other forest fruits around the perimeter and make a more classic decoration, without the number of the year. That’s what I did last year!
