When I created this delicious pancake creation, I thought … why haven’t I made it yet? A pancake swirled with cinnamon sugar and an amazing cream cheese glaze. It doesn’t get much better than that!

I knew my kids would just go crazy with them. So I doubled the recipe and made a large amount. I’m going to freeze some for my boys so they can be heated up before school. I know the best mother ever! Here’s the problem, only three made it in the freezer. They were so incredible that my boys couldn’t get enough. Then my boys wanted a snack and burned the rest. So I’m at zero. But that’s fine. It gives me an excuse to do it again. My boys said they were the best thing ever. They especially loved the cream cheese glaze over it!

Ingredients

  • Cinnamon filling:
  • 4 tablespoons of unsalted butter, melted
  • ¼ cup + 2 tablespoons of light brown sugar
  • ½ tablespoon of ground cinnamon
  • Cream cheese glaze:
  • 4 tablespoons of unsalted butter
  • 2 ounces of cream cheese at room temperature
  • ¾ cup of powdered sugar
  • ½ teaspoon of vanilla extract
  • Pancakes: (Can also use a box)
  • 1 cup of all-purpose flour
  • 2 teaspoons of baking soda
  • ½ teaspoon of salt
  • 1 cup of milk
  • 1 large egg, lightly beaten
  • 1 tablespoon of rapeseed or vegetable oil

Manual

  • Cinnamon filling: Mix the brown sugar, melted butter and cinnamon in a medium bowl. Put in a bag and set aside.
  • For the glaze: melt the butter in a small pan over low heat. Whisk cream cheese, vanilla and powdered sugar. Remove from heat and set aside until you can use it for pancakes.
  • Prepare pancakes: mix the flour, baking powder and salt. Mix the milk, egg and oil together.
  • Heat the frying pan to a medium setting. Spray with non-stick spray after heating. Put about ½ cup of dough in the pan. Wait for bubbles to form. Cut off the corner of the cinnamon filling and create a swirl pattern in the middle of the pancake (see picture above). See notes. Be careful not to bring it too close to the edge. Use a wide metal spatula to turn the pancake over and cook for another 1-2 minutes until golden brown.
  • Wipe the pan every time and repeat the process with the rest of the batter. Warm the glaze if necessary and sprinkle the pancakes over it.
